Stir fry
Principles:
- Summary: high heat, cook for 5-7 minutes, good to go…have your rice ready
- Need heavy pan, like wok, that can get very hot
- Needs to cook hot to prevent vegetables boiling instead - we want a stir fry, not a lake
- Have everything cut and prepared before beginning
- Cook vegetables soon after purchasing. After a while, they may still look good, however…
- Cook vegetables in order, with longer-cooking coming earlier

Sautee Meat/protein

Vegetables, in order of cooking time:
- Peppers, green beans
- Broccoli (blanch beforehand = immerse quickly in already boiling water)
- Mushrooms
- Bok choi (chopped)

Add sauces, and cook for 1-2 minutes
- Soy, oyster, garlic bean sauce, hoisin sauce
